Ciabatta Bread this dough is very sticky but thats the trick to getting the air bubbles in the bread stay with the recipe dont add more flour
Biga starter make night before
6oz flour
1/2 package of dry yeast
6oz water
mix with a fork cover a let stand over night

Scape biga into kithen aid mixer bowl
2cups of flour
1tsp salt
1pkg of yeast
6oz warm water
2oz warm milk
mix with paddle for 4 min it will look very battery
mix for 10 min with a dough hook dough will start to change
pour dough into a bowl to rise for 75min
dont pounch dough after rise fold from outside in to the middle gently with a spatula thats been sprayed with oil
let rise for 40 min fold again cover rise 30 min more
ok now your gonna say what kinda of recipe did marty give me it this a wet dough.
I use parchment paper 12x8 2 pieces flour paper put aside flour you hands good and the work space pour dough out cut in half form two squares 6x10
by patting dough with floured hands the dough will be bubbly and sticky
fold dough into loafs put on parchment papers placed on a flat cookie sheet
Now preheat oven to 450 the loaf will look flat but dont worry next step is very important you need spray water bottle spray loafs on parchment paper with water before putting in oven set timer for 27 mins you need to spray the bread 2 more times in the first 4 min of baking this seals the bread and it will rise in the oven as cooks bread will turn golden brown let cool for a least for a hour
This a great bread for spagetti meals and once you learn how to work with the the dough its pretty easy
